How to tell real honey from syrup, at home

Patients ask me this every week. The honest answer: no kitchen trick is foolproof, but these three checks catch most fakes.
1. The crystallisation check
Real raw honey crystallises. Depending on the bloom it may take weeks or months, but sooner or later it turns grainy and thick. Refined syrup stays glassy and liquid forever. If your honey has never crystallised through a winter, be suspicious.
2. The water glass
Drop a spoonful into a glass of room-temperature water. Real honey sinks and sits at the bottom like a stone, dissolving slowly only when stirred. Syrup blends into the water in seconds.
3. Read the label like a doctor
Look for a single origin, a harvest season, and an FSSAI licence number. Words like blended, processed, or invert syrup are the label quietly telling you the truth.
The only real proof is knowing where your jar came from. That is why every Teaspoon Honey jar names its valley.
One caution: none of these checks can prove purity on their own. A clever syrup can pass a kitchen test. Provenance cannot be faked.
