Honest answer: most people do not enjoy it on its own. Floral, with a bitter finish, and it carries far better once it has something else to sit on.

Pollen is what the bees gather from the flower and pack into the hive as the colony's own food. We take a share of it and dry it, and that is the entire process. It is not an extract, a concentrate or a powder that has been through anything.
Honest answer on taste: it is floral with a bitter edge and most people do not enjoy it on its own. Over curd, in a smoothie bowl or across a salad it works well. Start with half a teaspoon a day for a week before building up, add it after the heat is off, and if you have a pollen allergy talk to your own doctor before trying it.
Honey is food, not medicine. We describe how ours tastes, where it comes from and how people use it, and we leave the health claims to people who can prove them. Not suitable for children under one year old.
From the hive to your jar
Six steps, and the ones we leave out matter as much as the ones we do. Every honey in the range is made this way.
The bees forage wild Himalayan bloom, away from farms and spraying. Single valley, single flower, single season, and we do not blend a later harvest in to stretch it.
From beekeepers we know and visit, at the price they set. No middleman, no auction lot, no drum of honey with no history attached to it.
Taken only once the bees have capped the comb, which is their own signal that it is ready. Nothing is pulled early and dried down afterwards to hit a number.
Spun out of the frames without heat. Warming honey makes it flow faster and look clearer on a shelf, and it costs the aroma you paid for.
Left to stand so wax and debris rise, then strained coarsely. Fine filtering would take the pollen out with them, and the pollen is what proves where it came from.
Bottled into glass and sealed the day it is filled, with the batch on the label. Dr. Mohit tastes every batch before any of it ships.
This is also why our honey crystallises, and why yours will. Honey that stays perfectly clear on a shelf for years has usually been heated hard enough to stop it. Stand the jar in warm water for a few minutes and it pours again.

Crystallising is a natural sign of raw, unprocessed honey. Stand the jar in warm water to loosen it, do not microwave.
