why this jar, really

फ़ायदे · What makes this one worth it

The same four answers for every honey we sell, so you can compare them properly.

A three-week bloom, once a year

Litchi flowers for roughly three weeks in the whole year. The hives have to be standing in the orchard for that window, or the harvest simply does not happen.

It really does taste of litchi

Fruity and aromatic, smooth and runny, with the orchard still in it. This is the one most people take to on the very first spoon.

The one people give away

Over curd, over ice cream, stirred into iced tea, beside soft paneer on a board. It is also the jar people pick for someone who is hard to buy for.

Nothing warmed for the shelf

Extracted cold and left unfiltered, never warmed to look clearer. Heat takes the aroma first, and with litchi the aroma is most of what is in the jar.

Read this honey in more detail

The litchi bloom lasts roughly three weeks in the year, and the hives have to be in the orchard for that window or the harvest simply does not happen. That short season is the whole reason this honey tastes the way it does, and the reason there is never very much of it.

It is the most immediately likeable honey we make. People who are unsure about raw honey tend to be convinced by the first spoon of this one. The aroma is also the first thing heat would destroy, which is why it is extracted cold and never fine-filtered.

Honey is food, not medicine. We describe how ours tastes, where it comes from and how people use it, and we leave the health claims to people who can prove them. Not suitable for children under one year old.

how it actually gets made

From the hive to your jar

Six steps, and the ones we leave out matter as much as the ones we do. Every honey in the range is made this way.

01 One bloom, one season

The bees forage wild Himalayan bloom, away from farms and spraying. Single valley, single flower, single season, and we do not blend a later harvest in to stretch it.

02 Bought direct, by name

From beekeepers we know and visit, at the price they set. No middleman, no auction lot, no drum of honey with no history attached to it.

03 Left to ripen in the comb

Taken only once the bees have capped the comb, which is their own signal that it is ready. Nothing is pulled early and dried down afterwards to hit a number.

04 Cold extraction, small batches

Spun out of the frames without heat. Warming honey makes it flow faster and look clearer on a shelf, and it costs the aroma you paid for.

05 Settled, not fine-filtered

Left to stand so wax and debris rise, then strained coarsely. Fine filtering would take the pollen out with them, and the pollen is what proves where it came from.

06 Into glass, sealed the same day

Bottled into glass and sealed the day it is filled, with the batch on the label. Dr. Mohit tastes every batch before any of it ships.

This is also why our honey crystallises, and why yours will. Honey that stays perfectly clear on a shelf for years has usually been heated hard enough to stop it. Stand the jar in warm water for a few minutes and it pours again.

Dr. Mohit’s guide: how I would use this jar

  • Over vanilla ice cream. Trust the process.
  • In iced tea or lemonade, it dissolves beautifully.
  • Cheese boards: litchi honey + soft paneer is the move.
